We always pack a bit of ground beef as our trusty backup, it’s saved us more than once when the weather turned wild. When the rain settles in and the braai’s off the table, we turn the ground beef into a one-pot wonder that never disappoints. And if we’ve already got meat set aside for the evening fire, we simply cut it into chunks and use it as the base of the mix. It’s our go-to rainy day rescue, a quick, hearty meal that’s turned many soggy camp nights into something warm and worth remembering.

Africa Wild Child’s Rainy Day One-Pot
The size of your meal, and therefore the amounts needed here, depends on the size of your group. This recipe is for two people; adjust it as needed. The recipe is very forgiving, and you can add as much or as little as you prefer.
Ingredients:
- 300g ground beef
- 1 tin of beans
- 1 medium onion diced
- 1 tin mixed veggies (or fresh if you have them on hand)
- 1-2 tbs mayo (vinegar also works well here to give it a little tang)
- 1 tsp spice of your preference. We usually opt for a chili spice like cayenne pepper to warm us up inside
- Salt and pepper to taste
- A little oil or butter to fry the onions
Method:
- Heat up your butter/oil in a pot. Add the onions and fry till fragrant.
- Add your mince and fry till brown.
- Add all other ingredients and fry till well combined and fragrant. Taste and adjust as you go along.
This is a very quick and easy meal, but don’t let that fool you. This meal is packed with flavor, and it's very satisfying.
Grab your favorite pack of nachos, corn chips or crackers, scoop and enjoy. No other cutlery needed.
Because this is such an easy-go-lucky kind of meal, you can improvise as much as you feel comfortable doing - or be a little adventurous and try something a little different.
We love adding a quick tomato relish, sometimes made on the fly with fresh onions, tomatoes, and a kick of spice, or we’ll grab the trusty tinned version when time’s short. We like to let it simmer a little longer and toss in a stock cube or two, depending on how many hungry explorers we’re cooking for. The longer it cooks, the richer and heartier it gets, perfect for a raining stay-inside kind of day. To thicken it up, we mix a teaspoon or two of soup powder or corn flour with a 5 tbs of cold water before stirring it into the pot. (Keep an eye on it and give it a good stir; it thickens quickly and can settle at the bottom and burn if left alone.) It’s simple, rustic cooking, just the way we like it.
